You Will Need:
- 2 cups full-fat ice cream (any flavour)
- 1 1/2 cups self-raising flour
- chocolate chips
- vanilla extract (optional)
Let the 2 cups of ice cream soften up until you can easily stir it. Transfer the melted ice cream to a mixing bowl, then add the vanilla extract. Begin gradually adding the flour.
Stir to combine the flour until you have a thick batter, (it will kind of resemble bread dough, funnily enough). Add the chocolate chips and combine again – we used around a third of a cup but it’s totally up to you.
Spoon the mix into a regular, greased loaf tin and bake at 180°C for 40-45 minutes – until a skewer comes away clean with a few crumbs attached.
You can use any flavour ice cream, as long as it’s full fat. The options are endless, keep it simple or go all out – Neapolitan ice cream bread anyone? Chocolate Fudge Brownie? Heaven.
