Recipe: Tropical Chia Pudding

Jazz up your boring chia puddings with the taste of something a little more exotic. This fruity option will wake you right up on any dreary morning or could just as easily be served as the dessert for your evening meal.

You Will Need:

  • chia seeds
  • 1 mango
  • 1/4 small pineapple
  • (optional) extra fruit to decorate

Serves 1

Step One
Dice up the mango and pineapple and blend in a food processor until smooth, adding a few tablespoons of water to thin out the consistency.

Step Two
Transfer the fruit puree to a small bowl or even a mug and add your chia seeds, 2 heaped tablespoons should be just right. Stir and leave to stand for 5-10 minutes before stirring again.

Step Three
Cover and refrigerate for at least 4 hours or even overnight before serving up with extra fruit, yogurt, granola or even some ice cream.
