Courgetti is brilliant if you love how effortless and tasty pasta is, but don’t appreciate the post-meal bloat. Get yourself a spiralizer or Julienne peeler and you’ll be eating zucchini noodles every day of the week – especially with this gorgeous red pepper sauce.

Chilli Garlic Chicken Skewers
These incredible skewers take a bit of prep that might mean you have to get up 15 minutes early, but once you’re home after a busy day of work, you’ll appreciate just how easy these are to cook up! Serve with a big bowl of salad and some quinoa and you’ll be feeling great.

Pulled Pork Tacos
This is a great recipe for those of us who can’t skip out on the dirty street food! Everything from the homemade buckwheat tacos and no-mayo salsa make this a really guilt-free meal – and a great one to cook up at the weekend.

    It’s 5am and now all I want is a giant bowl of that pasta…! I’ve been wanting to try courgetti for ages now as I eat a LOT of pasta and this would be so much healthier. Maybe I’ll finally have to invest in that spiralizer.

    I love making stirfrys and throwing in pretty much every vegetable you can imagine – my favourite is a sesame and peanut one, it’s super quick and delicious!
