Recipe: Dreamy Banoffee Granola

A summery breakfast treat that tastes like pudding, and isn’t so bad for you either! You can go easy on the sugar as the bananas themselves are sweet, and you get extra crunch from the banana chips… 

You Will Need:

  • 3 cups rolled oats
  • 2 bananas
  • 1/3 cup coconut oil (and a little extra)
  • 2tbsp honey (or maple syrup/coconut or brown sugar)
  • 1tbsp ground cinnamon
  • 1tsp vanilla essence
  • 1/4 cup chopped hazelnuts
  • 1/4 cup flaked almonds
  • pinch of salt
  • 1/4 cup chia seeds
  • 1/3 cup banana chips, crushed

Preheat oven to 180C. 

Step One
Start by placing the bananas in a food processor or similar to blend, making there’s little to no lumps.

Step Two
In a large bowl, add in the rolled oats, salt and chopped nuts. Stir to combine.

Step Three
Place the blended bananas in a saucepan with the coconut oil, honey, cinnamon and vanilla, and gently simmer over a low heat for around a minute. Stir well during this time, and add in a couple of tablespoons of water to ensure the mix doesn’t get too thick.

Step Four
Add the liquid mix to the dry ingredients, and stir well – the dry ingredients should all be coated in the banana mix.

Step Five
Pour the granola in to a large, greased baking tray, along with a little extra coconut oil. Place in the oven for around 50 minutes, making sure to stir the mix every 20 minutes or so.

Step Six
After the time is up, make sure the granola is nice and crispy – it should be a lovely rich dark caramel colour. We like to leave the baking tray in the warm oven, with the oven turned off, overnight – just to dry out the mix a little more.

Step Seven
Once you’re sure the mix is lovely and crisp, add in the chia seeds and crushed banana chips. Taste to ensure your granola is as tasty as possible – you can add in a little more coconut sugar or cinnamon at this point too.

Once cool, place the mix in an airtight jar. Serve up with coconut yoghurt or almond milk for a delicious, goodness-packed breakfast!

    Ooooh this sounds delicious, I’ve been thinking about making my own granola recently, and I love that this is pretty low sugar too – so often I see recipes for granola with lashings of maple syrup/honey. I genuinely think I might make this, or a similar version – thank you!

    this is EXACTLY what I’m going to make over the weekend :) i nearly burnt my flat down last time I made homemade granola as I accidentally switched the oven to grill…
