You Will Need:
- 1/2 cup plus 4tbsp plain flour
- 1/8 teaspoon baking powder
- a pinch of salt
- 1/2 cup butter
- 1/2 cup brown sugar, firmly packed
- 1/2 tsp vanilla extract
- 1 egg
- 1/4 cup chocolate chips
- 3-4 tablespoons of salted caramel
After prepping all of your ingredients, melt the butter in a medium sized bowl. Once melted add your sugar, vanilla extract and 1 tablespoon of salted caramel sauce. Mix until the sugar is mostly melted then crack your egg into this mix and stir.
Add your flour, baking powder, salt and chocolate chips to the butter/sugar mixture and stir to make a batter.
Pop your cookie batter into the fridge to chill and firm up for half an hour (torture, we know, but oh so worth it in the end as this really improves flavour and texture).
Heat the oven to 180 degrees (fan).
Grab a baking tray and line with grease proof paper then start dividing up the mix. You can either roll the cookie batter into balls or spoon it straight onto the tray and spread it a little with your spoon. Press your thumb into the cookie batter and make an indent to spoon a small amount of caramel sauce into. Once that’s done you can push the cookie batter up around the caramel sauce to seal it in.
Bake! 10 minutes should do it, keep your eye on them to make sure they don’t burn as the edges will darken very quickly. They may seem underdone but they will continue cooking out of the oven for a minute or two and then firm up to be nice and chewy, mmmm.
